Shin Bones are my secret weapon! Oh my word do they make the BEST soup. Sometimes I'm caught just eating the shin bone meat before it ever gets it into the soup..
The shin bone is a cut of beef from the lower section of a cows leg. They are typically cut laterally so the bone, meat, and bone marrow are all left intact.
It's just the perfect combination.
I'll pull out 1-2 shin bones, slow cook them for a couple hours, pull out the bone and fat, then add all my other goods (carrots, corn, barley, rice, noodles, etc.) and bam its the most tender and flavorful soup ever!
