A cheese we have been producing for over 10 years! Featuring long oval wheels, these bloomies have an inviting fluffy white rind & a paste that ranges from springy to gooey depending on its maturity. Butter, crème fraiche, & mushrooms coat the tongue on younger batches while the more mature age brings out broccoli & cauliflower flavors at 7-10 weeks.
