What is a coulotte? And how do I tell the difference between a Sirloin Steak and a Top Sirloin Steak? (Not to be confused with a Sirloin Tip Steak).. 

The coulotte is the fat cap that is either left on (Top Sirloin Steak) or taken off (Sirloin Steak). Why does this matter- its really all about your preference. The Sirloin Primal (the big hunk of meat from that area of the cow) is pretty lean. If the fat cap is left on it can add more flavor as it breaks down and cooks into the steak. 

If taken off (Sirloin Steak) its a leaner cut. 

Either way, the sirloin is a very versatile cut. Its a great steak, easy to cut into strips to top a salad, or cut anyway to add to a dish.
