Wondering if you ever had skirt steak? Changes are if you've ever had a good fajita then it was probably skirt steak! 

The skirt steak is a thin, long cut of beef from the diaphragm muscles of the cow. 

This cut is best marinated then cooked quickly over high heat. Also, great for stir-fry meat and of course Taco Tuesdays on your fajitas!

Compared to flank steaks (also good for fajita strips) the skirt has more flavor but can be tougher so it defiantly needs to be cooked to a more medium rare for best results.
