Inspired by the flavors of a young Pecorino, but with a mix of our farmstead milk from all three milking herds.
Named after a nearby nature preserve, Runnymede features cow, sheep, and goat milk.
Just as Runnymede preserves the land for species of plants and animals to thrive in the future, this is our way of taking the lush spring milk and preserving it for the winter months.
We use elements of grana making & natural rind cheese methods to produce a cheese with flavors of heavy cream, caramel, & toast. The texture is excellent for cooking while also complex enough to stand on its own on a cheese board.
