Everybody is on time for dinner when a beef roast is on. I think its the beef aroma that fills the house for hours that has everyone seated and ready to eat without a fuss.
But, lets talk Chuck roasts. The chuck roast is a cut from the cows shoulder. A heavily exercised muscle giving the cut good flavor but also placing it in the tougher category.
Not to fear, with its high ratio of connective tissue the answer is slow cooking- allowing it all to break down into a tender, juicy roast.
We'll do a beef roast in the beginning of the week with mashed potatoes so everyone can have leftovers for lunch!
