A pork chop is just a pork chop, right? Actually, there is more than 1 cut of pork chop out there.
Around here we like our pork chops tender and only needing a quick cook. Other cuts can be less forgiving after being prepared.
Our chops are cut from the rib and loin area with the bone-in. (the bone helps provide some protection from overcooking and have some fat around it to help keep the pork juicer).
