The Farm at Doe Run's Spanish inspired cheese that is named after the butterfly that frequents their fields. The paste is white to off white in color from the addition of sheep & goat milk which contrasts with the deep rind color taken from the palette of the butterfly's wings. Younger batches have a smooth texture with notes of butter & hay which metamorphoses into a crystalline texture with more robust lanolin, buttered popcorn, & citrus peel flavors.
